How come you can't edit tabulated spectrum values directly in the editor? And Medium names...

There are probably a few other things like that in there I might want to edit as well

You can't edit tabulated spectra inside the mat editor, because it's somewhat obscure and would have been quite a bit of work to implement. However the mat editor should preserve the values if it loads a material with such values.
