Should they be modeled as they truly are? As in, two separate, spaced sheets of glass... or something simpler, like a single polygon?

Thanks, good advice. I got used to modeling that way in Wings, sort of forced to, it makes a lot of sense anyway.
I found my earlier problem, though, was because I was sloppy smoothing my window objects, my rendering issues cleared up once I noticed. Along with geometry, it helps to be mindful of smoothing groups as well.
