The col function takes the third component e2() from the position in 3D pos being sampled for input, that is the upwards z vector e2(pos) (counting from element zero). Galinette is of course plain correct; this specificity of bump mapping has raised countless, pointless arguments on the effectiveness of bump mapping based on texture resolution.

In the
bit, it's the 0.25 that you want to tweak. It's the limit of the dot, from the distance from the center vec2(b) to the actual coordinates being sampled in UV space vec2(a).

That's close to life-like, congrats ! I think that the instances all have the same orientation, it adds a lot to randomize rotation and scale for each (exporter thing).
